Chocolate & Nut Biscuits


You will need a 6.5cm biscuit cutter, makes about 20 biscuits.



80g unsalted butter

70g light brown sugar

1 large egg

175 spelt flour

1 teaspoon baking powder

1 teaspoon vanilla extract

1-2 tablespoons of natural yoghurt

75g dark chocolate

75g milk or white chocolate

50g of chopped brazil nuts or hazelnuts

a pinch of cinnamon


Preheat oven to 180° line a baking tin with baking parchment or with melted butter.
Cream the butter and sugar together in a bowl until light and fluffy, beat in the egg. Sift the flour and baking powder. Fold into the mixture with the vanilla extract and some yoghurt, a little at a time, to give you a soft dough texture, not too sticky. Add all the chocolate, nuts and cinnamon into the dough.

Use a little flour on your surface and roll out the dough to about 5mm thickness, no matter if a little thicker. Stamp out rounds and place them on your prepared baking tray with a good space in between them

Bake in the centre of the oven for about 20 minutes, but watch them, so they don't over do, or they will be too hard. Leave to cool a little and transfer on to a rack, and then just enjoy eating them.
